We will produce the best meat possible from your carcass through our custom butchering services. Whether it's beef, pork, or lamb, we process each animal individually, ensuring you receive your animal, your full yield, and proper one-on-one butcher time. Every client will have a personalized consultation with the butcher, allowing each animal to be cut to your specific needs. Some families prefer crock pot cooking, while others are grillers, and we can tailor our cuts to fit your preferences. Less waste means less burger or sausage and more premium butcher cuts. For BEEF, we guarantee a minimum dry aging period of 18 days, no questions asked. Our meat processing options include cowboy cutting (steaks, roasts, and burger) or a more niche cutting style designed to maximize every butcher cut and minimize hamburger production from your beef. For PORK, every carcass comes to you fully prepared, including chops, steaks, roasts, ready-to-cook bacon, two types of sausage (your choice), hams (whole or half), and chicharrónes, all selected by you. For LAMB/MUTTON, we dry age and cut beautifully to extract the butcher cuts you desire, along with a little lamb burger for those delicious meatballs and stews.
