We will produce the best meat possible from your carcass. Whether beef, pork, or lamb, we will process each animal individually which ensures you will receive your animal, your full yield, and proper 1 man 1 animal butcher time. Every client will have a one-on-one consultation with the butcher so every animal will be specifically cut to your needs. Some families are crock potters, some are grillers, and some are both. We can help you with more cuts to fit your needs. Less waste means less burger or sausage and more butcher cuts. BEEF We will dry age beef a minimum of 18 days, no questions asked. We offer cowboy cutting (steaks, roasts, and burger) or a more niche style of cutting designed to extract every butcher cut and produce less hamburger from your beef. Pork Every pork carcass comes to you fully done up. Chops, steaks, roasts, bacon's ready to cook, 2 types of sausage (your choice), hams (whole or half), chicharrónes. All is chosen by you. Lamb/Mutton Dry aged and cut beautifully to pull out the butcher cuts you want and a little lamb burger for those beautiful meatballs and stews.
